Bresil, cooperative de cafe Cooxupe, 14 fevrier 2013<br />
La plus importante cooperative de cafe du Bresil, Cooxupe, a un devoir de memoire. Immense centre d’archives, elle conserve, d’annee en annee, recolte apres recolte, l’ensemble des cafes cultives. Chaque grain est repertorie avec le nom de son exploitant. La cooperative s’attache egalement au present et a la qualite du cafe vendu dans le monde. <br />
Dans ce laboratoire, on trouve la meme installation qu’au siege de Nespresso, a Lausanne : une table ronde, recouverte de tasses, faisant face aux grains correspondants, prets pour la visite des specialistes que sont les gouteurs. Sorte de « nez », ils sont au cafe ce que les œnologues sont au vin. Ils observent la couleur du cafe a travers la transparence du verre, ils hument le parfum, enrobent leur palais du breuvage, avant de le recracher et ainsi, grace a leurs sens en alerte, permettent la naissance de grands crus.<br />

The largest coffee cooperative in Brazil, Cooxupe, has the duty of preservation. The immense archive center conserves samples of all of the coffee blends from year to year, harvest after harvest. Each strain of coffee beans is listed with the name of its producer. The cooperative also focuses on the present quality of coffee sold around the world. This laboratory has the same installation as at the Nespresso headquarters in Lausanne, Switzerland: a round table covered in cups next to the corresponding coffee beans, ready to host coffee tasters. The specialists have developed sensitive palettes for coffee tasting, similar to professional wine tasters. They observe the color of the coffee through the transparent glass, smell the aromas, and let the flavor of the coffee sink into their palettes before spitting it back out.
