Fazenda (a coffee farm within a plantation), Nossa Senhora da Apareida (Our Lady of Aparecida), is a member of the Nespresso AAA program: Agricultural equipment for pulping and demucilage of the coffee cherries. These steps are done before the drying and preparation of the grain for roasting. Pulping removes the pulp of the cherries, leaving the coffee parchment which is the grain of coffee still in its white envelope. To detach the mucilage and reveal the aromas, a phase of fermentation is necessary. The parchment coffee is thoroughly washed to eliminate the vicious substance called mucilage. This “waste” is then recycled to manufacture bioethanol used as fuel and also to supply electricity to farms.
